- 1 1/2 c. cooking apples, peeled and diced (approximately 2 large apples)
- 1/4 c. butter
- 3 c. white bread cubes, remove crust
- 1/2 c. sugar
- 2 c. hot milk
- 1 tsp. grated lemon rind
- 1/2 c. chopped dates
- 1/4 tsp. salt
- 1 tsp. vanilla
- 3 eggs, separated
- 1/4 tsp. nutmeg
Directions

1Preheat oven to 350°.

2Cook apples with butter in a saucepan until barely tender.

3Do not overcook.

4Combine undrained apples with bread, sugar, milk, lemon rind, dates, salt and vanilla. Beat egg yolks with a fork and stir into bread mixture.

5Set aside.

6Beat egg whites until stiff.

7Fold into bread mixture. Pour into greased 2-quart glass casserole; sprinkle with nutmeg. Place casserole in a large pan containing 1-inch deep hot water. Bake 45 to 55 minutes or until set.

8Serves 6 to 8.
