Apple-Red Cabbage Salad

  • 2 cups thinly sliced red cabbage
  • 2 crisp apples such as Jonagold or Honeycrisp, cored and cut into thin strips
  • 2 tsp. apple cider vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. toasted sesame oil, or (better) squash seed oil such as any of the ones made by Stony Brook Oils

Directions

    First toss the apples with the vinegar to prevent browning. Add the rest of the ingredients and toss. Serve within one hour.
