Apple Sponge Cake

- 3 whole eggs
- 2 egg yolks
- 3/4 cup sugar
- 1 cup flour self-rising raising
- 4 apples
- 1 lemon zest and juice
- cinnamon to taste
Directions

1Preheat oven to 180 degrees Celsius.

2In a high bowl, whisk the whole eggs, egg yolks, and sugar until obtaining a fluffy and foamy cream.

3Sift the flour, and mix in lightly with the above mixture.

4Peel the apple, and cut it into chunks, sprinkle with lemon juice, lemon zest, and cinnamon.

5Spread on the bottom of a round cake pan.

6Spread the dough over the fruit, and refrigerate for one hour.

7Bake for about 30 minutes, or until done.

8Garnish with powdered sugar and strips of apple peel.
