Apple Sponge Cake

  • 3 whole eggs
  • 2 egg yolks
  • 3/4 cup sugar
  • 1 cup flour self-rising raising
  • 4 apples
  • 1 lemon zest and juice
  • cinnamon to taste

    Preheat oven to 180 degrees Celsius.

    In a high bowl, whisk the whole eggs, egg yolks, and sugar until obtaining a fluffy and foamy cream.

    Sift the flour, and mix in lightly with the above mixture.

    Peel the apple, and cut it into chunks, sprinkle with lemon juice, lemon zest, and cinnamon.

    Spread on the bottom of a round cake pan.

    Spread the dough over the fruit, and refrigerate for one hour.

    Bake for about 30 minutes, or until done.

    Garnish with powdered sugar and strips of apple peel.
