Apple Squash Soup

Ingredients

  • 1 12 cups chopped onions
  • 2 teaspoons ground cinnamon
  • 14 teaspoon ground ginger
  • 14 teaspoon ground cloves
  • 18 teaspoon ground nutmeg
  • 1 12 tablespoons butter
  • 2 12 lbs butternut squash, seeded peeled and cubed
  • 2 apples, peeled cored and chopped
  • 1 13 cups apple cider
  • 3 cups chicken stock
  • salt and pepper

Directions

    Saute onion in butter until very tender, about 20 minutes.

    Add squash, apples, cider and chicken stock.

    Heat to boiling.

    Reduce heat and simmer, covered, until squash and apples are tender, about 25 minutes.

    Process mixture in food processor until smooth.

    Season to taste with salt and pepper.
