- 1/2 pound sushi rice
- 1/8 cup rice wine vinegar
- 2 teaspoons sugar
- Pinch salt
- 2 green apples (peeled and sliced paper thin)
- 4 tablespoons raspberry preserves
- 1/2 cup chopped strawberries
- Freshly chopped fresh mint leaves, for garnish
- 1/2 cup chopped green onions or chives
Directions

1For the sushi rice: Place the rice into a mixing bowl and cover with cool water.

2Swirl the rice in the water, pour off and repeat 2 to 3 times or until the water is clear.

3Place the rice and 2 cups of water into a medium saucepan and place over high heat.

4Bring to a boil, uncovered.

5Once it begins to boil, reduce the heat to the lowest setting and cover.

6Cook for 15 minutes.

7Remove from the heat and let stand, covered, for 10 minutes.

8Combine the rice vinegar, sugar and salt in a small microwave bowl and heat in the microwave on high for 30 to 45 seconds.

9Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture.

10Fold thoroughly to combine and coat each grain of rice with the mixture.

11Allow to cool to room temperature before using to make sushi.

12Roll the sushi rice into bite-size forms and place thinly sliced apple on top of each.

13Combine the strawberries and raspberry preserves in a small bowl and drop a small amount on top of the apple.

14To serve, garnish with chopped mint and green onions or chives.
