Apple, Walnut & Banana Bread

Ingredients

  • 2 bananas
  • 2 apple peeled and cut into small squares
  • 1/3 cup coconut sugar Other sugars work too but you may only use 1/4 cup
  • 3/4 chickpea flour Again other flours work fine
  • 1 cup almond meal
  • 1 teaspoon maple syrup Alternates are honey or agave
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts
  • nuts or Seeds to sprinkle on top - I used pecans

Directions

    Preheat oven to 180°C. Line a bread pan with Baking Paper.

    In a bowl, mash the bananas with a fork.

    Add the apple cubes, Coconut sugar, flour, Almond Meal, baking soda, salt, syrup, nuts & cinnamon to the bowl, and mix well. Pour into bread pan, sprinkle with chosen toppings

    Bake for 45-60 minutes

    Allow to cool for 15 minutes then transfer out of pan
