- 1/3 c. beet juice
- 1/4 c. vinegar
- 2 c. cooked, sliced beets
- 2 Tbsp. butter
Directions

1Combine sugar, cornstarch and salt.

2Gradually stir in vinegar and beat until smooth.

3In a saucepan, bring beet juice to a boil.

4Add vinegar and sugar mixture.

5Cook over low heat, stirring constantly, until clear and thickened.

6Add beets and butter.

7Simmer a few minutes.
