Apple Walnut Cake

Ingredients

  • 4 c. coarsely chopped apples
  • 2 c. sugar
  • 2 eggs
  • 1/4 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. sifted all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. chopped walnuts

Directions

    Combine apples and sugar; let stand.

    Beat eggs slightly; beat in oil and vanilla.

    Mix and sift flour, baking soda, cinnamon and salt; stir in alternately with apple-sugar mixture.

    Stir in walnuts.

    Pour into greased and floured oblong pan (13 x 9 x 2-inch).

    Bake at 350° about 1 hour, or until cake tests done. Let stand in pan, until quite cool; turn out on rack to complete cooling.

    Frost with Lemon Butter Frosting; decorate with whole walnut meats.

    Cut in squares to serve.
