Applesauce Buttermilk Cake

  • 2 c. flour
  • 1 Tbsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/2 c. margarine
  • 1 c. sugar
  • 2 eggs
  • 1 c. each: applesauce and buttermilk
  • 1 c. chopped nuts (optional)

Directions

    In medium bowl, stir together flour, cinnamon, soda, nutmeg and salt; set aside.

    In large bowl, cream margarine and sugar until light; beat in eggs until well blended.

    Stir in applesauce and buttermilk.

    Gradually stir in flour mixture until blended.

    Stir in nuts.

    Pour into greased 9-inch square baking pan.

    Bake in preheated 350° oven 40 to 45 minutes or until pick inserted in center comes out clean.

    Cool in pan on rack.
