Ingredients

  • 1 lb dry apricots
  • 2 lb stoned dates
  • 1 lb golden brown raisins
  • 1/2 lb preserved ginger, finely minced
  • 4 clv garlic, crushed
  • 1 lb brown sugar
  • 3 Tbsp. salt
  • 1/2 tsp cayenne pepper Distilled white vinegar

Directions

    Soak the apricots overnight in water to cover.

    Drain, place all the ingredients in a large saucepan.
  3. 3
    Cover with vinegar and mix well.
  4. 4
    Bring to the boil and cook very slowly for 2 hrs, till a good brown, slow and thick.

    If too thick, add in more vinegar during cooking.

    Spoon into clean jar.

    Seal and water bathe.
