- 2/3 c. apricots
- 1/2 c. butter
- 1/4 c. sugar
- 1 c. flour
- 1/3 c. flour, sifted
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. packed dark brown sugar
- 2 eggs (room temperature)
- 1/2 tsp. vanilla extract
Directions

1Rinse apricots.

2Cover with water; boil for 10 minutes.

3Let cool.

4Chop cooled apricots.

5Mix into crumbs with a pastry blender the butter, sugar and 1 cup flour.

6Press crumbs into a square 8 x 8-inch baking dish.

7Bake for 25 minutes at 350°.

8With a whisk, beat eggs lightly.

9Add brown sugar, 1/3 cup flour, baking powder, salt and vanilla.

10Stir until smooth.

11Add chopped apricots. Spread apricot mixture over just out of the oven hot baked layer; bake another 30 minutes.
