- 1 c. dried apricots
- 1 c. sugar
- 2 Tbsp. shortening
- 1 egg
- 1/4 c. water
- 1/2 c. orange juice
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 2 c. flour
- 1/2 c. chopped nuts
Directions

1Soak apricots in water to cover until soft and tender.

2Drain and cut up.

3Cream sugar, shortening and egg.

4Stir in orange juice, baking powder, baking soda, salt and flour.

5Stir in nuts and apricots.

6Grease two bread pans and line with foil; grease foil.

7Pour in batter.

8Let sit 20 minutes.

9Bake at 350° for 55 to 65 minutes.

10Remove from pan, peel off foil and cool.
