- 1 lb. dry apricots, cut into small pieces
- 2 c. boiling water
- 3 Tbsp. butter
- 3 c. plain flour
- 1 c. chopped pecans
- 1 tsp. vanilla
- 1 1/2 c. sugar
- 2 eggs beaten
- 1 tsp. soda
- 1 tsp. salt
Directions

1Cut up apricots with shears.

2Pour boiling water over apricots and add butter and sugar.

3Let cool.

4Beat in eggs and dry ingredients which have been mixed.

5Bake 1 hour at 350. Makes 2 big loaves.
