Ingredients
- 1 c. dried apricots, cut up and soaked in water for 1/2 hour
- 1 c. sugar
- 4 Tbsp. margarine, softened
- 1 egg
- 1/2 c. orange juice
- 1/2 c. water in which apricots were soaked
- 2 c. flour (all-purpose)
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 1/2 chopped nuts (optional)
Directions

1Cream together sugar, margarine and egg.

2Mix dry ingredients; add alternately with fluids.

3Last, fold in drained apricots and nuts.

4Spray 9 x 5-inch loaf pan with Pam.

5Pour batter into pan and bake at 350° for 50 to 60 minutes.

6Let stand overnight for easier slicing.
