- 1 c. dried apricots, cut in small pieces
- 1 c. sugar
- 2 Tbsp. shortening, softened
- 1 egg
- 1/2 c. fresh orange juice
- 2 c. self-rising flour, sifted
- 1/4 tsp. baking soda
- 1/2 c. chopped nuts
- 1/4 c. water
Directions

1Cover apricots with warm water and soak for 30 minutes.

2Drain and grease a 9 x 5-inch loaf pan.

3Line with wax paper and grease paper.

4Mix shortening, sugar and egg.

5Stir in the water and orange juice.

6Blend flour, liquids, nuts and apricots.

7Pour batter into pan and let 20 minutes.

8Bake at 350° for 55 to 75 minutes or until toothpick comes out clean.

9Remove wax paper and cool on rack.
