- 2 Tbsp. margarine
- 2 Tbsp. olive oil
- 4 skinned chicken breasts, halved
- 1/2 c. flour
- 1 tsp. salt
- 1/2 c. apricot preserves
- 1 Tbsp. Dijon mustard
- 1/2 c. nonfat yogurt
- 2 Tbsp. slivered almonds
Directions

1Preheat oven to 375°.

2Melt margarine with oil in baking pan. Shake chicken in a plastic bag with flour and salt until coated. Place chicken in single layer and bake for 25 minutes.

3Combine apricot preserves, mustard and yogurt.

4Spread apricot mixture on chicken and bake for 30 minutes more.

5Just before serving, brown almonds lightly in oven.

6Sprinkle almonds over chicken and serve over rice.
