Apricot Chicken

  • 2 Tbsp. margarine
  • 2 Tbsp. olive oil
  • 4 skinned chicken breasts, halved
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/2 c. apricot preserves
  • 1 Tbsp. Dijon mustard
  • 1/2 c. nonfat yogurt
  • 2 Tbsp. slivered almonds

Directions

    Preheat oven to 375°.

    Melt margarine with oil in baking pan. Shake chicken in a plastic bag with flour and salt until coated. Place chicken in single layer and bake for 25 minutes.

    Combine apricot preserves, mustard and yogurt.

    Spread apricot mixture on chicken and bake for 30 minutes more.

    Just before serving, brown almonds lightly in oven.

    Sprinkle almonds over chicken and serve over rice.
