- 2 c. sweetened, cooked, dried apricots
- 1 orange
- 1 Tbsp. plain gelatin
- 2 Tbsp. cold water
- 1/2 c. granulated sugar
- dash of salt
- 1 c. whipping cream (may use Cool Whip)
Directions

1Drain and chop cooked apricots, reserving syrup.

2Grate 1 teaspoon of rind from orange peel and dice orange.

3Soften gelatin in cold water.

4Heat 3/4 cup apricot syrup, sugar and salt on low heat.

5Dissolve gelatin in this mixture.

6Add fruits and rind. Cool until slightly thickened.

7Whip the cream and fold into fruit mixture.

8Cool until firm.

9Makes 4 servings.
