Apricot Layer Cake

- 1 (18 1/2 oz.) pkg. white cake mix
- 1 1/4 c. water
- 3 egg whites
- 1 Tbsp. grated orange peel
- 1 tsp. orange or lemon extract
- 2/3 c. apricot preserves
Directions

1In a mixing bowl, combine the first 6 ingredients; beat on low speed for 30 seconds or until moistened.

2Beat on high for 2 minutes.

3Pour into 2 greased and floured 8-inch round cake pans. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.

4Cool for 10 minutes; remove from pans to a wire rack to cool completely.

5Split each layer in half horizontally.

6Spread the cut side of each bottom layer with 1/3 cup apricot preserves.

7Replace top and set aside.
