  • 1 box mochiko or 3 1/2 c.
  • 2 (3 oz.) boxes apricot flavored Jell-O
  • 2 c. sugar
  • 12 oz. can apricot nectar
  • 12 oz. can water

Directions

    Mix all ingredients together well.

    Pour into a greased 9 x 13-inch baking pan.

    Cover tightly with tinfoil and bake 55 to 60 minutes at 350°.

    Remove from oven and after 15 minutes, remove tinfoil.

    Cool for several hours; cut into bite size pieces and roll in potato starch or kinako (soybean flour).

    Shake off excess starch.
