Apricot Nut Bread

  • 1 c. boiling water
  • 1 c. dried apricots
  • 1 c. nuts
  • 1 c. white sugar
  • 2 eggs
  • 2 3/4 c. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda

Directions

    Pour boiling water over coarsely chopped apricots and allow to cool.

    Beat the eggs until light and gradually beat in the sugar. Sift together flour, salt, soda and baking powder.

    Add the dry ingredients and apricots alternately.

    Add nuts.

    Place in small greased bread pan and bake at 375° for 50 minutes; reduce heat to 350° for an additional 25 minutes.
