  • 1 c. boiling water
  • 1/2 c. dried apricots, chopped
  • 1/2 c. pitted dates, chopped
  • 1/4 c. shortening
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 2 1/2 c. sifted flour
  • 2 1/2 tsp. baking powder
  • 1/2 c. chopped walnuts or pecans

Directions

    Pour boiling water over apricots and dates.

    Add shortening, sugar and salt; cool.

    Add egg, flour, baking powder and nuts; mix well.

    Turn into greased 9 x 5-inch loaf pan. Bake at 350° for 1 1/4 hours (75 minutes).
