  • 2 1/2 c. sifted flour
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. soda
  • 1 c. chopped walnuts
  • 1 c. chopped dried apricots
  • 1 Tbsp. hot water
  • 2 eggs
  • 1 c. buttermilk
  • 1/4 c. apricot nectar
  • 3 Tbsp. oleo, melted

    Preheat oven to 350°.

    Stir together flour, sugar, salt, baking powder and soda in large mixing bowl.

    Soak apricots in hot water to plump and tenderize.

    Mix eggs, buttermilk, apricot nectar and melted oleo; add to dry ingredients and mix.

    Pour batter into a greased 9 x 5-inch loaf pan and bake an hour to 75 minutes or until pick comes out clean.
