- 2 1/2 c. sifted flour
- 1 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp. soda
- 1 c. chopped walnuts
- 1 c. chopped dried apricots
- 1 Tbsp. hot water
- 2 eggs
- 1 c. buttermilk
- 1/4 c. apricot nectar
- 3 Tbsp. oleo, melted
Directions

1Preheat oven to 350°.

2Stir together flour, sugar, salt, baking powder and soda in large mixing bowl.

3Soak apricots in hot water to plump and tenderize.

4Mix eggs, buttermilk, apricot nectar and melted oleo; add to dry ingredients and mix.

5Pour batter into a greased 9 x 5-inch loaf pan and bake an hour to 75 minutes or until pick comes out clean.

6Cool on wire rack.
