  • 1 c. sugar
  • 2 Tbsp. shortening
  • 1 egg
  • 3/4 c. milk
  • 3/4 c. orange juice
  • 1 tsp. salt
  • 3 c. flour
  • 3 1/2 tsp. baking powder
  • 1 c. chopped dried apricots
  • 1/2 c. pecans, chopped

    Mix sugar, shortening and egg thoroughly.

    Stir in milk and orange juice.

    Sift dry ingredients together and stir in.

    Blend in nuts and apricots.

    Pour into greased 8-inch loaf pans.

    Bake at 350° for 60 to 70 minutes until toothpick comes out clean (top will crack open).

    Makes two 8-inch loaves.
