- 1 c. sugar
- 2 Tbsp. soft shortening
- 1 egg
- 3/4 c. milk
- 3/4 c. orange juice
- 1 tsp. grated orange rind (optional)
- 3 c. sifted flour or whole wheat flour
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. finely chopped dried apricots
- 3/4 c. chopped walnuts
Directions

1Grease a 9 x 5 x 2 1/2-inch loaf pan.

2Mix thoroughly sugar, shortening and egg.

3Stir in milk, orange juice and rind.

4Sift together flour, baking powder and salt.

5Stir in.

6Blend in apricots and nuts.

7Pour into prepared pan.

8Let stand 20 minutes. Bake about 70 minutes at 350° until toothpick comes out clean.
