Apricot Sauce

- 1/2 lb. dried apricots
- water
- 1/2 c. sugar or less if using apricot brandy
- 1/16 tsp. salt
- Cognac or apricot brandy to taste (approximately 3 to 4 Tbsp.)
Directions

1Wash and cook apricots in water as directed on package.

2Put the cooked apricots through a food mill, or puree them, about 3/4 cup at a time in a blender (or use a food processor).

3Add sugar and salt.

4Stir and cook 4 to 5 minutes over moderate heat.

5Add Cognac or apricot brandy to taste.

6Serve over puddings, or plain cake.

7Makes approximately 1 1/2 cups sauce.
