- 1 cup butter, room temperature
- 1/2 cup sugar (or Splenda)
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 jar (12 oz) apricot jam
- 2 egg whites
- 1/2 tsp almond extract
- 1 cup confectioners' sugar
- 1/2 cup slivered almonds
Directions

1Preheat oven to 350F. In a mixing bowl, cream butter, sugar (Splenda) and vanilla until fluffy. Stir in flour; blend well. Apread mixture into a 9x13 pan and bake for 15 minutes. Cool. Spread jam over the crust. Beat egg whites with the almond extract until there are soft peaks. Into this beat in confectioners' sugar a bit at a time. Spread this mixture over the jam in the crust then sprinkle with almonds. Bake for an additional 20 minutes and cool. Slice into bars and serve.
