  • 4 eggs
  • 2 Hellmann''s Light Mayonnaise dollops*
  • 1/2 red pepper
  • 1/2 courgette
  • 1/2 aubergine small
  • 2 tablespoons oil

Directions

    Cut the vegetables into cubes. Saute them in a frying pan with the oil. When cooked, set aside.

    In a bowl, beat the eggs and whisk in the mayo. Add the vegetables to the egg mixture and mix well.

    Heat the frying pan and pour in the mixture. Cook the omelette until set and cooked to a nice golden colour.
