Argentine Spinach Pie

  • 1 pie shell and crust for top (unbaked)
  • 1 1/2 c. frozen or 2 qt. fresh spinach, cooked, drained and chopped finely
  • 2 Tbsp. oil
  • 1 onion, chopped
  • 1/4 tsp. nutmeg
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 2 beaten eggs
  • 1 c. grated Swiss cheese

Directions

    Have ready the pie shell and crust for top.

    Cook, drain and chop the spinach.

    Saute the onion in the oil until tender. Combine the spinach, sauteed onion, nutmeg, oregano, salt, beaten eggs and Swiss cheese.

    Pour into pie shell.

    Arrange top crust and seal.

    Bake at 350° for 30 to 40 minutes.

    Serve hot in wedges.
