  • 1 cup breadcrumbs
  • 1 (14 ounce) can water-packed artichoke hearts, drained and chopped
  • 34 cup parmesan cheese, fresh, grated
  • 14 cup mayonnaise
  • 1 garlic clove, pressed
  • fresh parsley, snipped (optional)

Directions

    Preheat oven to 350.

    Chop artichoke hearts.

    Grate cheese.

    In same bowl, combine artichokes 1/2 cup of the cheese, mayonnaise and garlic pressed with a garlic press; mix well.

    .Using a small scoop, place one scoop artichoke mixture into bead crumbs roll until coated place on parchment lined baking sheet,sprinkle with remaining cheese.

    If desired, top with chopped parsley.

    Bake 25-30 minutes or until they are golden brown Remove to cooling rack.

    Serve.
