Artichoke Squares

Ingredients

  • 2 (6 oz.) jars marinated artichoke hearts
  • 1 small onion, finely chopped
  • 5 eggs
  • 1/2 c. seasoned bread crumbs
  • 1/8 tsp. pepper
  • 1 garlic clove, crushed
  • 1/4 tsp. salt
  • 3 Tbsp. chopped parsley (1 Tbsp. dried)
  • dash of hot pepper sauce
  • 2 c. shredded Cheddar or Monterey Jack cheese

Directions

    Drain artichokes, reserving marinade from one jar.

    Saute onion in marinade.

    Cut up artichokes.

    Beat eggs and add crumbs and seasonings.

    Stir in cheese, sauteed onion and artichokes. Turn into a greased 11 x 7-inch baking pan.

    Bake at 325° for 30 minutes.

    Cool slightly before cutting into squares.

    Makes 40 servings (I don't believe it!).
