Arugula Salad

Ingredients

  • 2 bunches arugula
  • 8 oz. penne
  • salt and pepper to taste
  • 1/4 c. chopped fresh basil
  • 2 to 3 Tbsp. olive oil
  • 3 to 4 medium sized ripe tomatoes
  • 2 scallions, chopped or 1/2 red onion, sliced
  • 2/3 lb. fresh Mozzarella, cut into bite-sized pieces
  • 2 to 3 large cloves garlic, minced

Directions

    Remove stems from arugula.

    Wash, dry and chill.

    Cook penne, drain and add salt and pepper, basil and olive oil.

    Chill.

    Mix tomatoes, scallions or onion, Mozzarella and garlic.

    Chill.

    When ready to serve, add penne and tomato mixes to arugula.

    Toss well. Adjust seasoning; add more oil if necessary.

    Serves 4.
