Ingredients
- 2 bunches arugula
- 8 oz. penne
- salt and pepper to taste
- 1/4 c. chopped fresh basil
- 2 to 3 Tbsp. olive oil
- 3 to 4 medium sized ripe tomatoes
- 2 scallions, chopped or 1/2 red onion, sliced
- 2/3 lb. fresh Mozzarella, cut into bite-sized pieces
- 2 to 3 large cloves garlic, minced
Directions

1Remove stems from arugula.

2Wash, dry and chill.

3Cook penne, drain and add salt and pepper, basil and olive oil.

4Chill.

5Mix tomatoes, scallions or onion, Mozzarella and garlic.

6Chill.

7When ready to serve, add penne and tomato mixes to arugula.

8Toss well. Adjust seasoning; add more oil if necessary.

9Serves 4.
