Asparagus Casserole

Ingredients

  • 2 cans or 2 (10 oz.) frozen asparagus spears
  • 1/4 c. chopped onions
  • 1 c. Mozzarella or Jack cheese
  • 1 can cream of mushroom soup
  • 1 stick butter
  • 1 can water chestnuts, chopped
  • 8 to 10 crumbled crackers
  • 2 c. cooked long grain rice

    Preheat oven to 350°.

    In large pan, saute onions in butter until tender.

    Add cheese.

    Stir until melted.

    Stir in soup and asparagus.

    Cook until warm.

    Line 9 x 13-inch dish with rice. Pour mixture over rice and sprinkle top with cracker crumbs.

    Bake 15 to 20 minutes.
