- 2 cans or 2 (10 oz.) frozen asparagus spears
- 1/4 c. chopped onions
- 1 c. Mozzarella or Jack cheese
- 1 can cream of mushroom soup
- 1 stick butter
- 1 can water chestnuts, chopped
- 8 to 10 crumbled crackers
- 2 c. cooked long grain rice
Directions

1Preheat oven to 350°.

2In large pan, saute onions in butter until tender.

3Add cheese.

4Stir until melted.

5Stir in soup and asparagus.

6Cook until warm.

7Line 9 x 13-inch dish with rice. Pour mixture over rice and sprinkle top with cracker crumbs.

8Bake 15 to 20 minutes.
