- 1 (10 oz.) pkg. frozen asparagus
- 6 slices white sandwich bread
- 1 c. shredded Monterey Jack cheese
- 1 small onion, chopped
- 4 eggs
- 2 1/2 c. milk
- 1 tsp. salt
- 1 tsp. dry mustard
- dash of cayenne red pepper
Directions

1Cook asparagus as directed.

2Cut 9 (2-inch) circles from bread slices.

3Tear remaining bread into small pieces and place into ungreased 8 x 8 x 2-inch baking dish.

4Layer asparagus, cheese and onion on bread pieces.

5Top with bread circles.

6Beat eggs, milk, salt, mustard and red pepper and pour on bread circles.

7Bake at 325°, uncovered, until center is set, 1 hour to 1 hour and 10 minutes.

8Let stand 10 minutes before cutting.

9(Will hold, covered, in refrigerator up to 24 hours before baking.)
