- 1/2 lb. mushrooms, sliced
- 1/2 c. chopped green onions
- 1 Tbsp. butter
- 1 clove garlic, minced
- pepper
- 2 c. asparagus, steamed and cut into 1 inch pieces
- 6 eggs
- 2 c. cooked rice
- 1 lb. cottage cheese
Directions

1Saute mushrooms, onions and garlic in butter until soft.

2Add pepper and asparagus.

3In bowl, beat eggs; add rice and cottage cheese.

4Mix well and place in 9 x 13-inch baking dish.

5Spread vegetable mixture over top.

6Heat through; do not let dry out.
