- 4 lb. asparagus
- 1/3 c. butter
- 1/2 c. all-purpose flour
- 5 c. milk
- 8 oz. creamy goat cheese (chevre)
- 1 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- 1-1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. nutmeg
- 15 lasagna noodles (about 12 oz.)
- 2 c. Mozzarella cheese, shredded
- 1/3 c. Parmesan cheese, freshly grated
Directions

1Preheat oven to 375 degrees.

2Trim asparagus.

3Cut stalks into 1-inch pieces.

4Remove 1-1/2 cups of the asparagus tips.

5Set aside.

6In a large pot of boiling water, cook the remaining asparagus for 3 minutes.

7Drain and refresh under cold water. Drain again.
