  • 6 1/3 ounces asparagus green
  • cream 20 cl. full
  • 1 teaspoon mustard
  • salt to taste
  • ground black pepper to taste

Directions

    Wash the asparagus, cut off the tips, and keep the tips for the garnish.

    Grind the asparagus in the blender.

    Add the liquid cream, mustard, salt, and pepper. Mix again.

    Sieve the preparation then pour it into your siphon.

    Fit the siphon with a gas cylinder and shake several times.

    Place the siphon horizontally in the refrigerate for a few hours.

    Put into dessert glasses and garnish with the asparagus tips.
