Asparagus Salad

  • 1 1/2 lb. asparagus, cooked just until tender and drained
  • 1 tsp. tarragon leaves
  • 1 tsp. garlic salt
  • black pepper (fresh ground)
  • Italian dressing
  • 1/2 c. tarragon vinegar

Directions

    Layer asparagus in a shallow pan.

    Sprinkle each layer with a few dry tarragon leaves, salt and pepper.

    Add salad dressing and vinegar; marinate overnight at room temperature.

    Drain and serve on lettuce leaves and top with mayonnaise flavored with a little of the marinade.
