Ingredients
- 2 large white onions
- 1/2 large bell pepper
- 1/2 Tbsp. mustard seed
- 1 tsp. turmeric
- 1/8 tsp. cloves
- 2 tsp. salt
- 1 1/2 c. vinegar (use 1/2 cider and 1/2 white vinegar)
- 1 c. sugar
- 8 to 10 young tender mirliton (if the skins are tough, they're not good)
Directions

1Wash mirliton, cut in half to remove seed.

2Slice lengthwise. Chop onions and peppers into large pieces.

3Combine all ingredients except mirliton in pot large enough to hold everything.

4Bring to a boil.

5Put mirliton in and leave just long enough to heat all the way through.

6Don't boil them.

7Sterilize jars and pack mirlitons in jars then pour over vinegar mixture. Seal and put in hot water bath for 10 minutes.

8I've doubled, quadrupled or even more.

9Still comes out wonderful.
