Asparagus Soup

  • 1 lb Asparagus Scraps
  • 1 Onion, chopped
  • 2 Garlic Cloves, chopped
  • 1 Qt Chicken stock
  • 1/4 C Heavy Cream
  • Salt
  • White Pepper
  • Dash of Cumin

Directions

    Saute onion and garlic cloves in a little bit of oil till very soft.

    Add asparagus scraps and chick stock and boil for about 30 minutes.

    Puree the crap out of it.
  4. 4
    Strain into a smaller pot.

    Add heavy cream, salt, white pepper, a dash of cumin.
  6. 6
    If it is not thick enough add roux.
