- 5 potatoes (russets and yukons work great)
- 1 onion, chopped
- 4 tablespoons butter
Directions

1Boil the potatoes just until tender.

2In the meantime, sweat the chopped onion in the butter until translucent.

3When potatoes are cool enough to handle, peel and cut into bite sized chunks.

4Put potatoes in baking dish.

5Pour butter and onions over potatoes.

6Cover dish with foil and bake at 350 degrees for about an hour.

7Shake dish once or twice during baking.

8Remove foil and allow to brown to your preference.

9Note: You can cook these longer at a lower temperature if you wish.

10They're done when you think they're done.

11Note: Add salt and pepper if you like.
