- 1/4 c ketchup
- 1/4 c mayo
- 1 t Asian chile paste (sambal oelek)
- 1 1/4 # ground beef chuck
- 4 kaiser rolls
- 4 pineapple rings
- 1 T veg. oil
- 4 eggs
- 3/4 c drained pickled beets
- lettuce & tomato slices to top
Directions

1Prepare grill for direct cooking over med/hot fire.

2Combine ketchup, mayo, chile paste for sauce.

3Mix beef with 1t salt, 1/2t pepper and form 4 patties (4.5 inch diameter & not too thick).

4Toast split rolls on grill.

5Pat pineapple dry and lightly brush with 1/2T oil.

6Oil rack and cook burgers and

7pineapple, turning once, about 4 mins. (fruit should carmelize slightly).

8Heat remaining oil in nonstick skillet over med/hi heat, fry eggs.

9Spread chile mayo on rolls, assemble from bottom up: pineapple ring, burger, beets, egg, lettuce tomato.
