Avocado Bean Dip

Ingredients

  • 3 medium ripe avocados
  • 3 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. sour cream
  • 1/2 c. mayonnaise
  • 1/2 pkg. taco seasoning mix
  • 2 (10 1/2 oz.) cans bean dip
  • 3 green onions, chopped
  • 2 medium tomatoes, diced
  • 1 can pitted ripe olives, chopped
  • 1 (8 oz.) pkg. shredded Cheddar cheese

    Peel, pit and mash avocados in medium bowl and add lemon juice, salt and pepper.

    In another bowl, mix mayonnaise, sour cream and taco seasoning.

    In a large, shallow (glass preferably) dish, spread bean dip.

    Cover with avocado mixture.

    Next spread with sour cream mixture. Sprinkle with onions and ripe olives. Cover with cheese and serve with corn chips for dipping.
