Avocado-Tequila Linguine

  • 3/4 lb. linguine
  • 3 tbsp. olive oil
  • 1/2 sm. red onion, finely diced
  • 1/2 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 jalapano pepper, seeded and minced (more if you like)
  • 4 tbsp. tequila
  • 2 lg. tomatoes, seeded and chopped
  • 2 tbsp. fresh oregano, minced
  • 1/2 cup cilantro, minced
  • 4 oz. feta cheese, crumbled
  • 1 avocado, peeled and chopped
  • Salt and pepper to taste

Directions

    Prepare linguine according to package directions; drain and set aside.

    Heat oil in a large skillet and saute the onion and bell pepper for 5 minutes.

    Add garlic, jalapeno and cilantro; cook for another 5 minutes or until tomatoes are softened.

    Stir feta cheese and avocado into the skillet.

    Season to taste with salt and pepper and add to the hot linguine.

    Combine thoroughly; adjust seasonings again if necessary.
