  • 1/2 tbsp Ground Cumin
  • 1 tbsp Ground Coriander
  • 1 tbsp Garam Masala
  • 1 Tandoori Spice (to coat chicken)
  • 1 large Onion
  • 1 clove Garlic
  • 1/2 tbsp Honey
  • 1/2 tbsp Honey
  • 1 small amount of lemon juice
  • 1 Chilli
  • 1 Chicken or Vegetable stock cube
  • 1 small blob of tomato puree
  • 3 Chicken Thighs

    It is important to brown the onions well, using a fair bit of oil.

    Cut them up as small as you can (makes a smoother sauce) and put them in a hot pan then turn down the heat a bit so they start browning then continue cooking without burning.

    When the onions are nicely browned and soft, add the chopped up garlic, garam masala, cumin and coriander (you might need to add more oil at this point, too).

    Fry off the spices for a few minutes.

    Add a tablespoon of honey and stir it in.

    Let it fry for a short while as you get the stock cube and crumble that in.

    After mixing in the stock cube, add some water to make the sauce ... saucey :) and squeeze a tiny dollop of tomato puree (maybe a teaspoon, just over?)

    Squeeze in a bit of lemon and some chilli (I use hot sauce, you could use chilli powder or better yet fresh chillis at the same time you put the garlic in) and season as you like - I like a good injection of black pepper.

    The sauce is done.

    Coat the chicken in tandoori spice and fry in a hot pan till sealed all over.

    Place in the sauce on a low heat to finish off while you prepare rice, naan etc.
