- 2 c. dried navy white beans
- 3/4 stick butter
- 5 Tbsp. good quality olive oil
- 1 1/2 tsp. summer savory or dried marjoram
- 3/4 c. chopped, seeded, peeled, fresh tomatoes
- salt and ground white pepper to taste
Directions

1Pick over beans; rinse well.

2Cover with water; bring to a boil for 5 minutes.

3Allow to stand in the water, uncovered, for 1 hour.

4Drain beans and place them in a saucepan with water to cover.

5Simmer, partially covered, until the beans are tender, but not mushy, about 45 minutes.

6Heat the butter and olive oil in a heavy saucepan.

7Add the beans, marjoram or savory, tomatoes, salt and pepper.

8Cook 5 to 8 minutes.

9The beans should taste awfully good and be soft, but not mushy.
