Ingredients
- 4 slice of bread, toasted
- 4 slice tomato (I like to use large heirloom tomatoes)
- 2 lettuce (or to taste)
- 2 eggs (large or jumbo sized work well)
- 8 slice thick cut bacon (or to taste)
Directions

1Toast bread of choice & allow to cool.

2Then add a smear of mayonnaise to all four pieces.

3Set aside.

4Slice tomato, clean & prep lettuce.

5Set aside.

6Fry bacon until crispy in a frying pan.

7You may need to do this in stages.

8Allow to drain on a paper towel.

9Set aside.

10Turn down frying pan temp to medium low, reserve the bacon grease.

11Begin building the sandwiches; the recipe makes two.

12I suggest bread, lettuce, tomato, bacon order.

13Leave top piece of bread off for now.

14Fry eggs in bacon grease.

15I recommend sunny side medium for the best sandwich compatibility.

16Season eggs with salt & pepper to taste.

17Add one fried egg to the top of each open sandwich & then place the top piece of toasted bread onto each.
