Bacalhau(Codfish Balls)

  • 1 lb. codfish (see note)
  • 1 clove fresh garlic, crushed
  • 1 sprig parsley
  • slat (only if using fresh cod)
  • 1 lb. potatoes, boiled and mashed
  • 1 medium onion, diced fine
  • 1/4 c. chopped parsley
  • pinch of red pepper flakes
  • 1 egg
  • oil (for frying)

Directions

    Boil codfish with garlic and parsley until done.

    Drain and cool; flake and add onion, parsley and pepper flakes.

    Boil potatoes and mash them.

    Stir potatoes into codfish mixture with one beaten egg.

    Form into generous 1-inch balls or small patties (for fish cakes) and deep fry.
