  • Pastry for a single-crust pie.
  • 3 packages low-fat cream cheese
  • 4 eggs, lighly beaten
  • 1/4 c skim milk
  • 1 c (4 oz) shredded swiss cheese
  • 1/2 c sliced green onions
  • 1 c sliced fresh mushrooms
  • 6 bacon strips, cooked and crumbled
  • 1/2 t salt
  • 1/8 t pepper
  • 1/8 t cayenne pepper
  • 1/8 t ground/dry mustard (optional)
  • sour cream (optional)
  • salsa (optional)
  • additional green onions (optional)

Directions

    Roll the pastry into a 13-1/2 circle an d fit into bottom and up the sides of the springform pan. Prick the bottom with a fork.

    Bake at 450 7-10 min -varies-until lightly browned

    Remove and cool.

    Beat cream cheese until fluffy in a mixing bowl; add eggs and milk and beat until smooth.

    Add the cheese, onions, bacon, mushrooms and spices to the cream cheese mixture and stir by hand until well incorporated.

    Pour into crust.

    Bake at 350 for 40-45 min. until a knife inserted in center comes out clean.

    Remove and place pan on a wire rack and cool for 20 minutes.

    Remove the side of the springform and cut into slices.

    garnish with more sliced green onions, add a dollop of sour cream, or serve with salsa.
