- 1 12 cups pancake mix
- 1 cup water
- 13 cup cornmeal
- 13 cup boiling water
- 12 cup cheddar cheese, grated
- 12 cup corn kernel
- 12 cup cooked bacon, diced (or ham)
- 2 tablespoons green onions, chopped
Directions

1Preheat griddle or skillet to medium-high heat.

2Pour boiling water over cornmeal.

3Set aside.

4Combine pancake mix and 1 cup water, beating til smooth.

5Add cornmeal mixture.

6Stir well.

7Add remaining ingredients.

8Cook pancakes, using about 1/4 cup of batter each.

9Flip over and cook on the other side.

10Keep warm til time to serve.
