- 4 slices bacon
- 2 green onions
- 1/2 c. commercial sour cream
- 3/4 c. (3 oz.) shredded Cheddar cheese
- 4 large yellow squash, sliced
- 1 egg, beaten
- 1/2 c. (2 oz.) shredded Swiss cheese
Directions

1Cook bacon in a large skillet, until crisp.

2Drain on paper towel.

3Crumble and set aside; reserve drippings.

4Saute squash and onions in drippings, 8 to 10 minutes.

5Combine egg and sour cream; add to squash mixture.

6Stir in half of the bacon; spoon in half of the squash mixture into a greased shallow 2-quart casserole dish.

7Sprinkle Swiss cheese over top.

8Spoon remaining squash mixture over cheese.

9Sprinkle Cheddar cheese over surface. Top with bacon.

10Bake at 350° for 20 minutes or until bubbly. Makes 6 servings.
